Chicken chili recipe
Ground or minced chicken meet cooked in a rich spicy chili sauce with tomatoes and beans.
Ingredients
1 cup chopped onions
1 clove garlic minced
1 tablespoon oil
16 oz. ground chicken or 500 grams chicken mince
1 cup chicken broth
1 can 15 oz / 400g stewed tomatoes, undrained
¼ cup dijon mustard
1 tablespoon chili powder or 1 chopped green chili
½ tablespoon dried oregano
¼ tablespoon ground red pepper, cayenne
Add last
1 can 15 oz./ 400g cannellini beans, drained, rinsed
1 can 8 oz./ 200g whole kernel corn, drained
1 cup shredded cheddar cheese
Method
Sauté onions and garlic in 2 tablespoons of hot oil until soft and not brown. Add the chicken breaking up the meat with a fork. Cook through.
Add the chicken broth, can of tomatoes with the liquid, mustard and the spices
Bring the contents to boil then simmer for 15 minutes on medium heat.
Add beans and corn and cook for 5-10 minutes. Serve with shredded cheese.
